3 1/4 cup flour
1 1/4 cup sugar
1 tbsp. baking powder
1/2 tsp. kosher salt
1/4 tsp. baking soda
6 tbsp. unsalted unsalted butter, melted
1/4 cup canola oil
2 large eggs
1 cup whole milk
1 cup buttermilk or lowfat vanilla yogurt
1 tsp. vanilla extract
1 1/4 cup fresh or frozen blueberries

Preheat oven to 350º. Spray cupcake tins with pam or use liners.
Sift flour and next 4 ingredients together in bowl.
Wisk melted butter and oil in bowl, add eggs and wisk. Wisk in buttermilk (or yogurt), milk and vanilla.
Add buttermilk mixture to dry ingredients and stir. Fold in blueberries and pour into muffin tins and bake.
Muffins are done when edges brown or when middle bounces back - about 20-30 minutes.
