3 eggs
1 cup oil
2 cups sugar
2 cups grated zucchini--you don't have to peel it
3 t. vanilla
3 cups flour
1 t. salt
1 t. soda
1/4 t. baking powder
1 t. each: cinnamon, ginger, cloves

Directions:

Mix eggs, sugar, oil. Add zucchini & vanilla. Mix lightly (by hand). Add dry ingredients. Pour into 2 well-greased loaf pans. Bake 45 minutes in 350 degree oven.

I think our kids would say that this is the smell of home. I baked this a lot while they were growing up and we would often have zucchini bread with cheese and coffee for breakfast. I got the recipe from Judy Hoskins, who babysat Max while I taught kindergarten half time '79-'81.
