¾ cup milk
1 tablespoon sugar
¼ teaspoon salt
½ to 1 teaspoon vanilla
4 slices French bread (3/4 to 1 inch thick, sweet or sourdough--stale is good)

Directions:

Beat first five ingredients together until well mixed. Lay bread in a flat pan. Pour the egg mixture over the bread. Refrigerate, covered, overnight so that the bread can soak up all the liquid. Sauté in butter about 4 minutes per side. Dust with confectioner’s sugar if you wish. Serve with syrup or jam.

I had heard about French pain perdu (lost bread), but had never eaten it in France. (The French might serve it as a light supper or lunch dish, not usually as a breakfast option.) One day I ran across the recipe in a magazine, and it has been a family favorite ever since. (I added vanilla to the recipe to give it more flavor.) You can serve it with butter and syrup, powdered sugar, or jam. The trick is to fry it slowly—in a pan just hot enough to barely sizzle—so that the custard cooks all the way through, and the outside is golden brown. I usually cut into a piece to check whether the batch in the pan is cooked and custardy or still wet.
