1 T. red wine vinegar
1 1/2 tsp. salad oil
1 1/2 tsp. hot sauce
1 clove garlic, minced
1/8 tsp. black pepper
1 firm ripe avocado
1 (15 oz.) can of black-eyed peas
1 (11 oz.) can corn
2/3 cup chopped cilantro
2/3 cup finely sliced green onions
4 roma tomatoes coarsely chopped
1 jalapeno, finely diced

Directions:

Mix vinegar, oil, hot sauce, garlic and pepper in a bowl. Cut the avocado into cubes and add to the vinegar mixture, tossing gently. Drain and rinse the peas and corn. Add to the vinegar mixture with the cilantro, green onions, tomatoes and jalapenos. Mix gently. Add salt to taste.
