1 1/2 c. sugar
1/2 c. shortening (butter)
1 egg
1/4 tsp. salt
1 tsp. vanilla
2 1/2 c. flour
1/2 c. raisins
1/2 c. chopped pecans
1 tsp. (or more) cinnamon
1/4 tsp. cloves
2 c. applesauce
2 tsp. baking soda

Icing:
1/2 c. butter
pinch of salt
1 c. brown sugar
6 T of half and half
1 tsp. vanilla
2 c. powdered sugar

Directions:
Directions:
Mix applesauce and baking soda together in a large bowl and set aside (it swells).
Cream sugar and butter. Add egg, salt, and vanilla and mix. Add flour, raisins, pecans, cinnamon, and cloves and mix. Add applesauce mixture and mix all together.
You can bake this in a 9x3 inch pan, bundt pan, 11x16 inch pan, or loaf pans. Bake at 350º until browned and pulling away from pan. Larger flat pan takes about 20-30 minutes. Other sized pans take longer.
For icing, heat butter, salt, brown sugar, and half and half in pan to a boil. Remove and add vanilla and powdered sugar. Pour over cake and enjoy.

I like to ice this cake but often if baked in loaf pans I would use as I would banana bread and not ice.
