30 large tomatoes
6 medium onions
3 red bell peppers
2 green bell peppers
3 Tb salt
4 cups white sugar
4 cups brown sugar
4 cups vinegar
1 sm can tomato paste (6 oz)
1 qt. ketchup
2 tsp whole cloves
2 tsp cinnamon
2 tsp whole allspice

Blanch, peel and quarter tomatoes. Place in a big pot. Chop onion and peppers with food processor. Add to tomatoes. Add sugars and vinegar. Place spices into two pieces of muslin or cheese cloth approx. 6 inches square. Tie up the bags with string or clean rubber band. Place in tomato mixture. Bring mixture to boil and simmer for 3-6 hours. Stir regularly to avoid scorching the bottom. When mixture has boiled down and is somewhat thicker, add tomato paste and ketchup. Remove spice bags, bring to a boil again. Place in clean glass jars and properly process to seal. 20 min. for pints, 25 for quarts.
