6 egg yolks
1/2 cup sugar
1/4 cup cold water
1 tsp lemon rind (can make it without-mom's comment)
1 tsp lemon extract
1 1/4 cup cake flour
6 egg whites
1/2 tsp cream of tartar
1/4 tsp salt

Directions:
Directions:
Beat 6 egg yolks(at least 1/3 cup) until very thick and lemon color, about 5 minutes. gradually add 1 cup sugar. Beat in 1/4 cup cold water and lemon rind and lemon extract. Beat in 1 1/4 cup sifted cake flour.
Beat egg whites separately until frothy. Add 1/2 tsp cream of tartar and 1/4 tsp salt. Beat until it hold peaks. Fold cake batter into egg whites with wire whisk.
Bake in 9"tube cake pan at 325º for 60-65 minutes.
Cool upside down.
