Arugula lettuce
Mixed Greens
Papaya sliced thin
Red onion
Feta Cheese
Toasted Almonds (optional)
(adjust amounts according to individual taste)
Dressing:
1/4 cup of Olive Oil
1/4 cup white wine vinegar
1 tbsp fresh lemon juice
fresh ground pepper

Directions:
Directions:
Mix lettuce/greens, onion, feta cheese, and papaya slices. Toss with dressing just before serving. Sprinkle with toasted almonds just before serving.
