1 T Vegetable oil
4 oz. Bacon cut into small pieces
2 lbs. stew beef cut into 1 inch cubes
4 medium onions thinly sliced
4 cloves of garlic, minced
2 tsp dried thyme
1 tsp celery seeds
1 bay leaf
1 tsp salt
1 tsp ground pepper
1T sugar
¼ C flour
2C beer

1. In skillet, over medium-high heat, cook bacon until crisp. Remove and drain on a paper towel. Set aside. Discard fat.
2. Add oil to skillet, brown meat in batches, and transfer to slow cooker.
3. Reduce heat to medium. Add onions to pan and cook until soft. Add garlic, thyme, celery seeds, bay leaf, salt and pepper and cook for 1 minute. Sprinkle sugar over mixture and stir well. Add flour and cook, stirring, for 1 more minute. Add bacon and beer and cook until mixture thickens.
4. Pour mixture over beef in slow cooker. Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours, until meat is tender. Discard bay leaf. Serve immediately.

Make Ahead: This dish can be partially prepared the night before it is cooked. Complete Steps 1 and 3. Cover and refrigerate overnight. The next morning, heat the oil and brown the meat (Step 2) or skip the browning and simply put the meat in the slow cooker covered by the prepared mixture and cook as directed.
