1 ½ c. brown sugar
¾ c. oil
1 egg
1 c. buttermilk
2 ½ c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
2 ½ c. rhubarb, chopped
½ c. walnuts (optional)
½ c. sugar
1 Tbsp. butter, melted


Directions:

Preheat oven to 325 degrees. Mix brown sugar, oil and egg together. Add buttermilk, flour, salt, baking soda, cinnamon, and vanilla. Fold in rhubarb (and nuts). Place in 2 greased loaf pans. Combine sugar and butter and glaze over top of loaves. Bake 1 hour.
