Gumbo Recipe

1 c. chopped onion
1 medium bell pepper - chopped
2 celery stalks chopped
1 T. salt
1 t. pepper
1/2 t. cayenne pepper
1/2 t. oregano
1/2 t. thyme
2 bay leaves
1/2 lb. breaded okra
1lb. HB meat
2 T. flour
2 c. water
1 can crushed or chopped tomatoes
1 lb. sausage
1 T. margarine
1 c. rice
2-3 lb. shrimp

Oil in bottom of pan - add okra, onion, pepper - fry - oil should be gone when you add HB meat - brown, add flour, water, tomatoes, cook until boiling - add sausage, margarine, rice. Cook on top of stove 1 hour - in the last 10 minutes, add shrimp and cook shrimp approximately 10 minutes.
