6 eggs
1 1/4 cup shortening (melted and cooled)
1 3/4 cup sugar
2 1/2 tbsp. baking powder
2-3 tsp. lemon extract or 1 tsp lemon oil
6 cups flour

Directions:
Directions:
Melt and cool shortening.

In electric mixer, beat eggs about 5 minutes. Add sugar, shortening, and extracts. Add dry ingredients. Let mixture sit a couple minutes...if too soft add more flour. Drop by teaspoonfulls onto baking pans (or follow directions for Ingianitti recipe). Bake at 375º for 8-10 minutes. Cool and ice cookies with an icing made with confectioners sugar, lemon extract, and milk. Enjoy!
