1 pkg. Udon Noodles
4 oz. Toasted Sesame Seed Oil
4 oz. Apple Cider Vinegar
1 handful fresh grated ginger
4-5 cloves of garlic
6 oz. (or more to taste)
Tamari (Health Food Section or Store)
2 slim carrots
1/2 cup toasted sesame seeds
1/2 cup sliced scallons (the green stalks)

Pour toasted sesame oil in frying pan and sauté garlic on medium heat, watching carefully that it does not burn. When the aroma from the garlic and toasted oil make your mouth water, it is time to add the tamari. Heat again and sqeeze the juice from the grated ginger into the mix. Finally add the vinegar. Once heated taste to adjust amounts. You should be able to taste all five ingredients individually. Place mixture aside.

Boil the udon noodles according to pkg. directions.

Add the mixture to the noodles and toss to coat. Once all noodles are saturated, drain the excess and reserve for sauteing vegetables later in the week.

Garnish with toasted sesame seeds and scallions.

To add more color to your garnish add carrot flowers. Carrot flowers are simple. Just make 3 long cuts, evenly spaced, into the length of each carrot and remove a long slim wedge. Then slice the carrot horizontaly. Each slice will appear to be a flower. Boil to just tender. Rinse with cold water to retain color.

If you decide to do the carrot flowers as a garnish, try them first so you can take your time and they will be ready when you need them. Taking your time with a carrot that wants to roll (during the cuts along the length) is a safe idea.
