Spinach Lasagne Recipe

6 slices chopped bacon
1 onion, chopped
1 red pepper, chopped
3 cloves garlic, minced
1-2 c. cooked spinach (squeeze out liquid)
116 oz. can chopped tomatoes, drained
116 oz. can tomato sauce (tomate frito)
1/4 c. red wine
2 T. red wine vinegar

Cheese mixture:
15 oz. Ricotta cheese (Queso Burgos)
3/4 lb. Mozzarella
1 egg

Saute bacon, onion, pepper and garlic. Add spinach, tomatoes, tomato sauce, red wine, red wine vinegar. Layer in 9x13 pan: 1 c. sauce, precooked lasagna noodles, 1/2 cheese mixture, 1/2 sauce mixture, then repeat
(noodles, cheese, sauce). Bake at 350F for 40 minutes.
