6 cups peeled, sliced apples ( I like to use different varieties)
Prepared pie crust for double crust pie
2/3 - 1 cup sugar (depending on tartness of apples) (I like to use half brown and have granulated sugar)
1 tsp cinnamon or nutmeg
pinch of salt
lemon juice
1 tbsp butter

Directions:
Directions:
Preheat oven to 450º. Place bottom crust in 9 inch pie dish. Place half of the apples in crust, top with half of the sugar mixture, add remaining apples, heaping them in the center. Top with remaining sugar mixture. Sprinkle 1tbsp lemon juice on top. Dot with butter. Cover with top crust, seal edges and flute. Slash the top in the center. Bake in oven at 450, for 15 min or until golden brown, then decrease temp to 350 and continue baking 40-45 min longer or until apples are tender.

Note- If apples are esp juicy, combine 1 tbsp flour with the sugar mixture. If apples are dry, sprinkle them with about 2 tbsp water.
