1/4 cup Roquefort, Gorgonzola, or other blue cheese
6 oz cream cheese, at room temperature
1/2 cup unflavored yogurt
2 T finely chopped chives or scallions
2 T salted pistachios nuts, finely chopped
Salt to taste

Directions:
In small bowl mash the blue cheese with a fork. Add the cream cheese mix until smooth. Add the yogurt, chives, pistachio nuts, and salt and blend thoroughly. Taste and adjust the seasoning. Cover and chill. Serve with raw vegetable sticks or crackers.
