2 cups flour
2 cups sugar
2 teaspoons baking soda
2 eggs, slightly beaten
1 cup nuts, chopped fine
1 cup flaked coconut
1 can (20 oz.) crushed pineapple, including juice
1/2 cup raisins

Frosting
1 package (8 oz.) cream cheese, softened
1 stick butter, softened
1 teaspoon vanilla extract
1 1/2 cups confectioners sugar

Grease and flour a 9 X 13 pan. Heat oven to 350 degrees. In a large bowl, sift together flour, sugar and baking soda; stir to blend. Add eggs, nuts, coconut, pineapple and raisins; stir to mix - Do Not Beat. Turn batter into prepared pan. Bake at 350 degrees for 45 minutes or until a cake tester inserted in center comes out clean. Remove from oven and cool in pan on wire rack. Frost while still warm. To make icing, in a medium bowl, beat together cream cheese, butter, vanilla and confectioners sugar until smooth. Frost cake while still warm. Makes one 9 X 13 cake.
