3 eggs
3/4 c. vegetable oil
3/4 c. buttermilk
1 c. sugar
1 c. brown sugar
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. pecans - diced fine
5 c. shredded carrots

Frosting:
1 (8 oz.) pkg. cream cheese
1/2 c. melted butter
1 tsp. vanilla
4 c. powdered sugar

Directions:
Directions:
Mix frosting together and refrigerate overnight.
Pre-heat oven to 350º. Mix eggs, oil, buttermilk, sugars, and vanilla together and beat well and set to the side. Mix flour, baking soda, cinnamon, and salt together and add to other mixture and beat well. Add pecans and carrots and fold together.
Pour into buttered bread pans and bake for about 55 minutes. Frost after cool.
