1 eggplant, sliced
Fresh baby spinach
2-3 tbsp olive oil
1/2 cup seasoned bread crumbs
1 egg beaten with little water
1 container Mascarpone cheese
your favorite sauce

Directions:
Directions:
Dip eggplant slices in egg then bread crumbs, brown each side in hot oil. Place in baking dish, top each piece with few spinach leaves, sauce then tbsp of the cheese. Bake at 350 for 5-10 min until sauce and cheese are heated.
