Chicken Curry and Rice Recipe

3T. butter
1/4 c. minced onion
1 1/2 tsp. curry
3T. flour
3/4 tsp. salt
3/4 tsp. sugar
1/3. tsp. ginger
1 c. chicken broth
1 c. milk
2 c. diced, cooked chicken
1/2 tsp. lemon juice
3-4 c. cooked rice

Melt butter. Saute onion and curry in butter. Blend in flour and seasonings. Cook on low until smooth and bubbly. Slowly add chicken broth and milk. Bring to a boil Boil 10 minutes (stirring constantly). Add chicken and lemon juice. Heat through. Serve over rice.

Toppings: raisins, coconut, almonds, peanuts, pineapple, banana. orange sections, etc.
