1 c. sugar
1/2 c. oil (not olive)
2 eggs
1 c. sour cream (Quark)
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
5 slices pineapple, finely chopped

Topping:
1/2 c. coconut
3 T. sugar
1/2 tsp. cinnamon
Directions:
Directions:
Blend the sugar and oil. Add eggs one at a time, beating well after each addition. Beat in sour cream. Combine the flour, baking powder, and salt; add to the sour cream mixture. Stir in the pineapple. Pour in a greased 9” square baking dish (23 cm square). Combine the topping ingredients; sprinkle over batter. Bake at 350º F for 35-45 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. I doubled this and put it in a 9x13” (23 cm x 33 cm) dish and cooked it for 1 hour.
