6 eggs
2 10 oz. frozen chopped spinach (thawed and squeezed dry)
2 cups herb stuffing mix
1 large onion (grated)
1 c. freshly grated parmesan cheese
3/4 c. butter (room temperature)
1 tsp poultry seasoning
salt and pepper

Directions:
preheat oven to 350º. Beat eggs lightly in large bowl. Add remaining ingredients and blend well Roll into walnut-sized balls. Transfer to baking sheet. Bake until golden, about 20 minutes. Serve hot.

Personal Notes:
Can be partially baked for 10 minutes, cooled, and frozen. Reheat thawed balls in 350 degree oven for 10-15 minutes. This recipe is also delicious if you add cooked italian sausage when mixing the ingredients.
