3T butter
4 medium yellow bell peppers
2 leeks, chopped
1 large carrot, chopped
1 medium onion, chopped
2 C chicken or vegetable broth
2 C milk
Salt & pepper to taste

Directions:
Directions:
Melt butter in saucepan over medium heat. Saute vegetables until tender, about 20-30 minutes. Add broth and simmer about 30-40 minutes. Puree in blender. Simmer about 10-15 minutes. Add milk until desired consistency. (I usually don't add any milk at all) Season with salt and pepper to taste.

This was a recipe served by Chef Christopher Gross that I loved in his restaurant, then I found the recipe in the newspaper and have made it ever since!
