6 T butter
3 C chopped onion
3 T flour
6 C chicken or vege broth
2 medium heads of cauliflower, chopped
1 1/2 C milk
3/4 tsp salt
1/8 tsp pepper

Directions:
Directions:
In large pan over medium heat, cook onion in butter for 5 minutes. Stir in flour and cook for one minute. Stir in broth then the cauliflower. Bring to boil, reduce heat and simmer for 20-25 minutes. Puree in blender. Stir in milk as needed and add more salt and pepper if needed.
