10 slices good bread, crusts cut off, buttered and quartered
2 1/2 C Shredded Cheddar Cheese
1 lb. bacon, cooked and crumbled
9 eggs, beaten with 2 1/4 C milk
1 T chopped onion
Salt and Pepper

Directions:
Directions:
Grease dish. Add onions, salt and pepper to egg and milk mixture. Layer ingredients in dish:
1) bread, 2) cheese,3) bacon,4) egg
Cover and refrigerate overnight. Bake uncovered at 350º for one hour, then cover for last 10-15 minutes if browning too much. Let stand 10 minutes to set before serving.

I often add diced geeen chilies and/or jalapeños, sun-dried tomatoes and or roasted red peppers.
