1 cup of canola cooking oil
13/4 cup of sugar
31/4 cup of flour (I use whole wheat pastry flour)
2 eggs
1 cup of chopped nuts
1/2 cup of raisins
1 teaspoon of soda
2 teaspoons of vanilla
11/2 teaspoons of cinnamon
1/2 teaspoon of salt
3 cups of tart fresh apples, peeled and chopped

Preheat 300

Blend sugar, oil, eggs, and vanilla together. In separate bowl combine dry ingredients, adding the nuts, raisins, and apples.
Blend dry into wet and incorporate.

Spray a tube pan with oil, and add mix. Cook 1 hour and 15 minutes. In layer pan, cook 45 minutes

Caramel glaze: In pan heat 1 cup of brown sugar, with 1/2 cup of butter or margarine, 1 teaspoon of vanilla, and 1/2 cup of cream or evaporated milk. Blend on medium heat, then bring to a boil to thicken. Cool and spread on cake.
