4 lbs. peaches
2 tsp cornstarch
1tsp lemon juice
1 tsp fresh ginger, peeled and grated
Combine and toss to coat.
Place fruit mixture in 9 X 9" greased pan or pan sprayed with Pam

1 cup oatmeal
1/2 cup whole wheat flour
1/2 cup packed brown sugar
1/4 tsp ginger
pinch salt
1/4 cup chilled light butter, cut in small pieces
Combine first 5 ingredients. Add butter and work with hands until crumbly, like pie crust. Spoon over fruit mixture. Bake at 350º for 35-45 minutes. Serves 6-9
