1 lb chicken breasts, cut into 2 inch pieces
2 cups panko bread crumbs
1 T salt
2 eggs, beaten
1 1/2 cup flour
1/4 cup Frank's Buffalo sauce (for adult dunking!)

4 russet potatoes, peeled and cut into 1/2" sticks

2 T olive oil

2 cups vanilla ice cream
1/2 cup milk

Preheat oven to 400º.

Toss potatoes with olive oil and place on a baking sheet. Sprinkle with salt. Bake for 25 - 40 minutes until lightly browned, turning halfway through cooking time.

Meanwhile, beat eggs in a shallow bowl, place flour in a shallow bowl, and combine bread crumbs with 1 T salt in a shallow bowl. Line these up on the counter so you can dunk the chicken in order: flour, egg, bread crumbs, and place on a baking sheet sprayed with cooking spray. Bake for 15 - 20 minutes until cooked through, turning halfway during cooking.

When chicken and potatoes are done, cool while you blend ice cream and milk to make shakes.

Kyra loves a McDonald's Happy Meal - chicken nuggets, fries, and a vanilla shake. I created a healthier "McJohnson's" version. When asked what she wants for dinner, she'll say McJohnsons! everytime and asked that I include this recipe in our family cookbook. Feel free to make your shakes chocolate! :-)
