1 chicken
3 carrots
2 turnips
1/2 small celery root or 3-4 stalk celery
1 onion
1/2 bunch parsley

Directions:
Directions:
Peel carrots and turnips, cut in half
Cut celery stalks in half, quarter the onion
Put chicken and vegetables in a large pot, add 1tsp salt, bring to boil, turn down heat and cook for 2 hours.
Cool and strain soup. Refrigerate broth after it has cooled, skim off fat.
Meanwhile discard all vegetables except for carrots, slice carrots. Take chicken meat off the bone, reserve some for another dish such as chicken enchiladas or chicken pot pie..
Cook some thin noodles such as angel hair pasta and drain. Place carrots, meat, cooked pasta, in defatted broth, bring to boil, add salt to taste. Garnish with chopped parsley before serving.

If your kids don't like cooked vegetables this soup is full of vitamins from vegetables that are discarded after soup is cooked.
