Wok Chicken with Long Rice Recipe

3 lbs. boneless skinless chicken cut into small strips
6 Tbsp soy sauce
1 Tbsp sesame oil
2 Tbsp minced fresh ginger
3 cloves garlic, minced
1 1/2 tsp sugar
Dash of pepper
2 Tbsp vegetable oil
8 oz sliced fresh mushrooms
4 chopped green onions
10 oz. long rice (cellophane noodles)
8 oz chicken broth

Directions:

Combine 2 Tbsp soy sauce, sesame oil, ginger, garlic, sugar and pepper to create a marinade. Add the chicken and refrigerate at least 1 hour.

Cover long rice with cool water and soak for 30 minutes. Cut into eight lengths (or shorter if you prefer). (Pick it up with your left hand and cut it with kitchen shears, like you're cutting long hair.)

Place large skillet or wok over high heat. when hot, add vegetable oil and marinated chicken. Cook until chicken no longer is pink, turning often. Reduce heat and add mushrooms, green onions, long rice, chicken broth, and remainder of soy sauce. Simmer until hot, stirring often -- about 3 minutes.

Note: Long Rice requires little cooking time, It absorbs liquid quickly, and will break down if cooked too long. (turns into a mushy mess).

SO good, and SO authentic. This dish appears at every luau, along with the Kalua Pork (recipe also in this cookbook). I first discovered this dish at a luau given by the BYU Polynesian Club, when I was dating a Fijian named Hiagi (Henry) Wesley as a sophomore at BYU. Hiagi wasn't a keeper for me, but this recipe was!

Double this if you're serving men. It feeds 6 polite women.
