Pork shoulder -- 5-7 lbs
Hawaiian sea salt
Liquid Smoke

Cut two large pieces of aluminum foil, long enough to wrap securely around roast. Place the foil at right angles to each other, in the same of an X. Place the pork shoulder roast on the middle of the X. Rub with a handful of sea salt. Sprinkle liberally with Liquid Smoke. Wrap tightly in the foil.

Place in crock pot and pour a cup or two of hot water around the foil package. (The pork bundle will be cooked in a water bath).

Set crock pot to low and cook overnight, OR set to high and cook for 6-8 hours. It can cook for up to 12 hours -- it just gets more and more tender.

To serve, open the foil and remove the meat, shredding it with two forks as you place it into a serving dish.

Serve with steamed rice, garnish with minced green onions. Traditionally this meal is served with macaroni salad. (Macaroni, eggs, onions, and mayonnaise.) Also nice to serve with fresh pineapple, if possible. May be accompanied with shredded and stir fried cabbage. In Hawaii they often serve the meat mixed with cooked cabbage.
