1/3 cup shortening
2/3 cup sugar
2 eggs, slightly beaten
½ tsp. salt
1 ¾ cup sifted all purpose flour
2 or 3 bananas, mashed
2 ¾ tsp. double acting baking powder

Directions:
Directions:
Beat shortening until creamy and glossy on medium speed. Gradually add sugar, beating until light and fluffy. Add eggs and beat until thick and pale. Sift dry ingredients together and add alternately with bananas. Blend well after each addition. Turn batter into greased loaf pan. Bake at 350º for 1 hour and 15 minutes. Let cool 20 to 30 minutes before cutting.
