1 1/2 c corn meal
1/2 c flour
1/2 tsp kosher salt
1/2 tsp baking soda
1 c milk
2 eggs at room temperature
2 tbsp vegetable oil or bacon grease
1 onion chopped
2 jalapeno peppers chopped finely
8 oz cream corn
1/2 lb cheddar cheese grated

Directions:
Directions:
Preheat oven to 350º Fahrenheit.

Beat together eggs and milk. Add oil, onions, jalapenos, creamed corn and grated cheese, folding together with dry ingredients until well combined.

Pour into an iron skillet or greased casserole dish.

Bake 40 to 45 minutes until golden brown or tester comes out clean.

This cornbread is really a meal in itself and it is delicious. Sam's dad made this every Thanksgiving. It was one of his favorites.
