2-1/2 cups whole wheat flour
¾ cup sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. salt
2 eggs, beaten
½ cup vegetable oil
¾ cup milk
½ cup pecans, chopped
2 cups raw carrots, finely shredded

Directions:

Combine dry ingredients. In another bowl, mix eggs, oil, and milk. Combine the two mixtures and fold in carrots and pecans. Spoon into a greased 9x5-inch loaf pan. Bake at 350º for 1 hour.
