3 eggs
2 cups all-purpose flour
1 cup vegetable oil
1 tsp. baking soda
1 ½ cups sugar
1 tsp. baking powder
1 tsp. vanilla
1 tsp. ground cloves
1 tsp. ground cinnamon
1 cup walnuts, chopped
2 cups grated, unpeeled, raw zucchin
1 tsp. salt

Preheat oven to 350º. Butter one 12-inch loaf pan or one 8 inch loaf pan and 2 mini-loaves. Beat eggs, oil, sugar, and vanilla until light and thick. Fold grated zucchini into mixture. Sift flour, baking soda, baking powder, salt, cinnamon, and cloves together. Stir into zucchini mixture until just blended. Fold in walnuts.

Pour batter into pan and cover with aluminum foil. Bake on middle rack in oven for 1 hour and 15 minutes or until tester inserted in center comes out clean. Allow bread to remain in pan until completely cool.
