2 cans (10 oz) of Rotel Mexican Diced Tomatoes and Green Chilies, drained
2 (15 oz) cans of black beans, rinsed and drained,
1 medium onion, diced,
2 garlic cloves, minced,
1 pound of boneless beef sirloin, thinly sliced
2 cups of shredded Monterey jack cheese with peppers
Hot cooked yellow rice

Directions:
Directions:
Stir together first 4 ingredients. Layer half of beef in a lightly greased 11 by 7 inch baking dish; top with half of tomato mixture. Repeat procedure

Bake at 350 degrees for 30 minutes. Sprinkle with cheese and bake 5 more minutes. Serve over rice.

When Brian and I first got together, he asked where I kept my cans of Rotel, almost as casually as, "Where do you keep the sugar?" I had no idea what he was talking about as I had never heard of Rotel. Now it is a staple in our kitchen and an easy addition to spice up many recipes, as they often do in Texas.
