2 (8 oz.) packages cream cheese
3/4 cup sugar
1 tsp. lemon juice
1 tsp. vanilla extract
2 eggs
Vanilla Wafers
blueberry or cherry pie filling, canned or fresh fruit of choice

Directions:
Directions:
Beat until light. Place one vanilla wafer in bottom of paper cup. Place paper cups in muffin tins. Fill with cheese batter. Bake 15-20 minutes at 350º. Remove to rack and cool. Top with canned blueberry or cherry pie filling or fresh fruit of your choice. Freeze before adding fruit topping if desired.
