Ingredients:  
1 baked pie crust

3 eggs
3 tablespoons cornstarch
2/3 cup of sugar
dash of salt
2 cans of evaporated milk
1 tablespoon of vanilla
1/2 stick of butter
1 cup of shredded coconut

Directions:
Directions:
Mix all ingredients together in a medium mixing bowl. Pour mixture into double boiler and cook over medium heat until thick. Remove from heat. Add 1/2 stick of butter until melted and then stir in 1 cup of coconut.

Pour into baked pie crust.

Serve with whipped cream

Variations: This makes a good, traditional cream pie. If you leave out the coconut, you can add bananas for a banana cream pie.
