1 Tbs olive oil
4-6 medium red potatoes (about 4 cups cubed)
5 garlic cloves
1 package of breakfast bulk sausage (12 oz. or so)
1 tsp dried rosemary
1 tsp sugar
1 can (14.5 oz.) diced tomatoes

Directions:
Directions:
Heat oil over medium heat in a skillet.Meanwhile, scrub the potatoes (leave skins on) and cut into roughly 3/4 " cubes, adding them into the pan as you cut them. Raise the heat to high, then cover and cook for 3 minutes to brown the potato cubes, uncovering occasionally to stir.

Add the sausage to the skillet and stir in with the potatoes. Cook the sausage like you would taco meat. Continue to cook potatoes and sausage until browned.

Add garlic, rosemary, and sugar to the skillet and stir in.

Next add the tomatoes with their juice and cook until 1/2 the juice evaporates, about 2-3 minutes or more. Eat and enjoy!

I use turkey breakfast sausage. You can break up the patties or buy it in a tube-like casing. My kids love this! Jim and I do too. It's different but very yummy!
