2 eggs, separated
2 Cups of Buttermilk (can use low fat)
2 Cups of Flour
2 tsp of baking powder
1 tsp baking soda
1 tsp salt
1/4 cup of melted butter or oil

Directions:
Directions:
Heat waffle iron. Place egg yolks in a large bowl, whites in a small bowl. Whip egg whites until stiff peaks form, and set aside

To yolks, add buttermilk; beat well. Add flour, baking powder, soda and salt; beat until smooth. Stir in oil. Fold egg whites into batter. Pour batter on hot waffle iron until steaming stops or waffles are golden brown.

Variations: Sprinkle some with chopped pecans, or add chopped cooked bacon or fresh blueberries to the batter on the iron before it is cooked. Cook the ones with fresh blueberries last, and spray the cooking iron each time, or they will stick.
