½ lb Swiss cheese, grated (half Emmental, half Gruyere)
1 tbsp. all purpose flour
1 clove garlic, halved
1 ½ cup dry white wine
freshly ground nutmeg
1 oz brandy
French bread, slightly stale

Directions:
Directions:
Toss cheese with flour to mix. Rub inside of fondue cooker with cut sides of garlic. Pour in wine and heat just until bubbles appear. Do not let it boil. Add cheese, one handful at a time, stirring constantly. As soon as it melts, add additional cheese until all used. Add nutmeg and brandy.

Cut French bread into 1 ½ inch cubes, being sure that a piece of crust is on each piece. Spear bread cube on fork and dip into fondue. If fondue becomes too thick, add a little warmed wine. A firm, tart apple cut into pieces makes a delicious dipper.
