1/2 cup shortening
2 eggs
1 tsp vanilla
1 cup sugar
2 T. thick cream
Cream together and add:
2 1/2 cups sifted flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
Mix well, chill for several hours.

Date filling:
1 1/2 cups dates
1/2 cup sugar
2 T. lemon juice
1/2 cup water
1 T flour
Cook slowly until thick and smooth. Cool.
Roll dough to 1/8" thickness on floured surface and Cut out round circles, using a cookie or biscuit cutter. Need two per cookie. Place one round circle on greased cookie sheet, Spoon about a teaspoonful of date filling onto it and place second circle on top. Seal the edges of the cookie. Bake at 350º for about 15 minutes or until browned.
