Picnic ham or ham hock
1 large or 2 medium onion
Dried pinto beans
1 Jalapeņo pepper
Salt and pepper to taste

Directions:
Directions:
Dad cuts a picnic ham into 3 pieces and roasts it. He uses 1 section and freezes the rest for another time. Place all ingredients covered with water in large pan and cook on high. Need to watch it closely, keep adding water as needed and stir so the beans don't burn. Cook until beans are tender, anywhere from 3 to 5 hours depending on how old the beans are.

We like this with scrambled eggs. Dad learned how to cook Ham & Beans when he was in the Navy. An Italian buddy would make them for the guys on duty in the office on weekends. He used bacon instead of ham because it wasn't always available and dried red pepper.
