Make a solution from 2 quarts of water and ¾ to ½ c salt. Cover raw, mature pumpkin seeds with the solution. Bring to a boil and simmer two hours, or soak seeds in salt solution overnight.

Drain seeds and dry on absorbent paper. Place seeds in shallow pan and roast in a 300° oven for 30-40 minutes or until golden brown. Stir occasionally.

Take seeds out of the oven. Add 5 tsp melted butter or margarine to each cup of seeds. Stir to coat. Place on an absorbent towel. Salt to taste. (The butter and additional salt are optional).
