1 boneless pork loin (3-4 lb.)
1 (16oz.) jar of raspberry preserves
1 can Chipotle Peppers in Adobo sauce (add to taste, about 2)
Kosher salt to taste
Cracked pepper to taste
Cumin to taste
1/2 tsp. Cardamom (with apples)

Pre-heat oven to 350º.
Make a rub with Kosher salt, cracked pepper, Cumin. Rub the pork loin and set aside while you make the sauce.
In a food processor place two Chipotle peppers and some Adobo sauce. Also add the raspberry preserves and Cardamon with apples. Mix until you have the consistency of a smooth paste. Taste and add more peppers if needed.
Now coat the loin with some of the sauce and save the rest for platting. Place loin in refrigerator and let set for at least one hour.
Place loin in oven and bake for about 1 1/2 to 2 hours or until meat thermometer reads 150º.
Remove from oven and allow to stand for 10-15 minutes before serving.

If you would like to make this on the pit you should use about a 10 lb. full loin and cook it at 225-250 degrees and cook wrapped in foil for about 3 hours.
Remember that the internal temperature is what is important when it comes to pork. Also, do not cut pork until it is time to serve. This will keep the loin nice and juicy.
