4-6 potatoes, peeled and sliced
1 small onion, chopped
Small amount of oil
Salt and pepper to taste
6 Eggs
1 C milk
Salt and pepper to taste
2 C cubed ham
1-1/2 C Parmesan cheese (more or less to taste)
(freshly grated Parmesan cheese tastes best!)
1-1/2 C Cheddar cheese (more or less to taste)

Spray a 9x13 inch dish with Pam. Preheat the oven to 350

In a skillet fry the potatoes and onion together in oil until done. Salt and pepper to taste.

In a bowl mix the eggs and milk together, salt and pepper to taste.

Once the potatoes are done layer in the dish 1/2 of each, potatoes first, then the ham and then the cheeses. Make a second layer the same way. Pour the egg mixture over the top. Bake in a 350º oven for about 1 hour or until bubbly and browned.

This can be put together ahead of time and refrigerated overnight. Baking time may be a little longer as the dish will be cold. º
