48 oz Hunts Ketchup, 1 and a half cups white vinegar, half cup sugar 1 bushel of Portuguese Hot peppers or Italian Hot. I like the hot ones

Strip peppers of seeds by cutting top and slice down the side. Combine ingrediants in a very large pan bring to a simmer. Add peppers and cook peppers until they begin to soften. Then follow proper canning procedures. Caution use thick rubber gloves while removing seeds.

Dont over cook the peppers or they will be mush after you are done canning. I boil large mouth pints and then fill with peppers top with juice try not to let any pepper stick out of the juice before you put the lid on, clean lid surface,put lids and rings on and put in oven for 1 hour at 225 degrees.
