3 c. all-purpose flour
2 t. baking powder
1 t. salt
4 T. shortening
1¼ c. warm water (not hot)

1.Mix dry ingredients in bowl. Mix shortening into dry ingredients until mixture resembles corn meal in texture. Add water a little bit at a time until dough is soft (not sticky), knead dough for a few minutes. Separate dough into pieces and form 12 small dough balls. Let balls rest for ~10 min. Roll out dough balls using a rolling pin or tortilla press (dust with flour or corn meal before rolling out). Lay tortilla on hot griddle (325F) and cook each side for 1-2 minutes.

This recipe makes 12-14 small tortillas (6-8 inches). We often make a double or triple batch and freeze the extra.
