2 cups raisins
2 cups nuts, chopped (walnuts or almonds both work)
2 cups natural sugar or 1-3/4 cup honey
4 cups flour
2 tsp. cinnamon
2 tsp. cloves
2 tsp. allspice
1 tsp. salt
4 eggs
1/2 cup oil
2 cups persimmon pulp
3 tsp. baking soda

Directions:
Directions:
Combine raisins, nuts, sugar (if using honey don't add at this time). Then mix in flour and spices. In a separate bowl, beat the eggs. Add the oil, persimmon pulp, soda and mix well (if using honey add it at this time. Then combine with dry ingredients and mix well.
Pour into an oiled and floured tubular or bundt pan. Bake at 350º - 375º for about 1-1/2 - 2 hours. Don't overbake or you'll dry it out. Cake should be moist like a fruit cake. Test it by sticking in a knife; if it comes out clean, the cake is done.

You can also bake as muffins!
