4 zucchini - 8 inches in length
1 onion, minced
3/4 cup butter
1-1/2 lbs ricotta cheese
2 T tamari (or low sodium soy sauce)
1/2 cup Parmesan cheese, shredded
1/2 cup chopped walnuts
Salt & pepper to taste

Directions:

Trim zucchini and slice in half lengthwise.
Steam 10-15 minutes. Scoop out pulp. Saute onion in butter with tamari until transparent. Add zucchini pulp and simmer 5 minutes. Remove from heat add cheeses, chopped nuts, salt and pepper.
Stuff zucchini shells with this mixture, place in baking dish and heat in oven at 400º until hot. Optional: sprinkle top with Parmesan cheese.

I can not remember if it was this dish or the Zucchini Fingers dish everyone liked so much. I am putting both in to cover all bets. Of course, I could have just created my own version of these recipes, in which case I don't know if I can duplicate it here.
